If you can get past the 70's Felini-esque decor - the Hyatt on Kowloon-side does an incredible dinner in the old, grand style.

Had a great dinner at Lucy's in Stanley - hidden gem in the market - not cheap but wonderful (RESERVE)

Tutte Bene on Knutsford Terrace, Tsim Sha Tsui is better than its HK-side counterpart, in m opinion.

Murjab (sp?) also on Knutsford Terrace does good middle eastern fare.

Has anyone found a good Russian restaurant?

We've yet to get our act together and get reservations at Lucys. They try to offer us dodgy timings (can you eat between 6:30 and 7:00?) and as much as I'd like to try them out.. I'm not one who is going to keep calling them for reservations 2 weeks in advance.

Best Chinese: Jade Garden Restaurant. I also see those Ciu Chow style Restaurants d best Chinese resturants.

Best Indian: I'm not sure if EBENEEZER's (Wanchai & DB) count as an Indian restaurant...but food there especially there Biryanis are great!

Best Thai: Chili & Spice (DB & Gold Coast)

Best American: a tie between Dan Ryans and Friday's

Best Japanese: Genki (d sushi bar chain)

these restaurants are quite pricey but really expect the finest food ever

Italian
Da Dominico(causeway bay)
The Mistral(intercontinetal hotel, tst)

Japenese Teppanyaki
The Peninsula Hotel

Chinese Dim Sum
I would say all the five star hotels in HK have a pretty good dim sum menu.
Especially the Intercontinetal Hotel, in tst.
