there are a few threads on bringing pets to HK on this site. it is best/easiest/more efficient to get a transport co to do all the work for you. there a lot of businesses that do nothing but pet trasport. they know the ins and outs of export. basically, you pay a fee, ensure your pet is vaccinated, hand over your pet a day or so prior to departure, and pick up in HK. most places will also organise import permit on your behalf (for a fee). could not be easier. size of your pet makes no real difference in regards to export, the only differnce is you will need to buy a bigger crate from the transport Co. the quarantine procedures depend on where you're coming form. check the HK gov't website for details. also search the threads, as there is a few links on a recent thread. from memory most countries of origin have very few restrictions on them when bringing IN to HK.
obviously with a big dog you will need to live in an area where you can walk it. most labs are pretty good inside, but need to be walked. places in NT (gold coast area/aegean coast) should be cool, also discovery bay. some apartment blocks allow pets, some don't.
as Iarac says, there are quite a few big dogs in HK. the only problem with a big dog is you cant discretely carry it in a bag like a small dog if you need to. when i first came to HK i was often taken back to see a small furry head pop out of a bag... atleast a big dog will remember what it's legs are for
