Are you looking for a long term employment or just someone for a day or two (or on an ad hoc basis)?

loads of drivers advertise in some of the local magazines. Try the freebie HK Magazine (usually has a pull-out section with classifieds)

Hong Kong Dollar Saver also has loads of drovers advertising.

I'm surprised there's much market for that these days... Do they bring their own animals?

You can hire some Indian drivers in the TST area. Perhaps some Indian members can recommend someone. I usually have an Indian friend hook me up with one.

Valencia1 will become famous soon enough
One taxi driver gave me his name card and said call him if it's over $50, 80% discount. I've heard on TV news during the lowest time they offer 70% discount. Many companies are offering rates lower than taxis.

Just to be clear here, I think what you mean in English is 20% discount and 30% discount respectively (i.e. you pay 80% or 70% of the original price). In Chinese you define discounts by what you pay, in English by what you save.

Here endeth the lesson.
