I'm french and i'm coming to Hong Kong on January 3rd.

I'd like to know how you found your job in HK just for me to know whether i should change my way to find or not.

Through the French Chamber of Commerce....I got the list of the companies and then e-mailed the one that I'd like to work for.

Better to apply before yo get to HK. If you have at least 3 years working experience, and can make over US$30K per year (HK$20K per month), then you have a good chance at securing a job and a visa.

Why don't you get started now, check out the French Chamber of Commerce in HK. Go to this link:
http://www.fccihk.com/member/search....h&Type=Sponsor
and then just click on the Seach button. You will get the complete list of member companies of the FCC in HK, and names of contacts, which is gold when looking for a job.

I need to add that my case is a bit different as I was already working nearby (Macau) and therefore could easily go to HK for interviews....
