Alright, play friendly or don't behave friendly...

All I know is its three hours to the weekend, we've got a full tank of gas, half a pack of cigarettes, it's nearly dark and I'm wearing sunglasses.

How much fun is that??? Can you imagine going to Disneyland in an amber (or worse) rainstorm?

There you can eat in the hotel (again a bit better than pricey fast food) or you can even leave and see what is in the local area (again I dont know what is around that area).
Unfortunately, the HK park is so far away from 'civilisation' that this option makes little sense. All infrastructure nearby is owned by Disney and even if one takes the MTR back to Sunny Bay station, there is absolutely NOTHING there.

They also close some rides if there is rain. Being in the place it is also, will mean if a storm hits it'll get pretty wet out there.
