I'm interested in doing dance classes of all types, but particularly ballet (for adults), jazz/funk, hip-hop.
Also, are there any good places for pilates?

I just saw this thread, hope it's not too late...

The Academy for the Performing Arts in Wan Chai have classes for adults in Ballet, Modern, Jazz and Chinese Dance. There are evening classes and I think they have something like 10 week programs. New programs might be starting soon, they have had a summer course, but have classes throughout the year.

Do you know if the HKAPA do any partner/social dance classes like salsa or ceroc

ceroc is pretty good fun as a dance class. have you tried that?
