Personally, I think that age is a state of mind. If you feel uncomfortable hanging out with people because they look young, then maybe you need to re-evaluate what you are looking for. You probably are not going to find the comfort of what you already know (New York) in Hong Kong.
There are tons of places around central with an older clientele. The closest thing you are going to get to NYC club environment is Drop. You may feel right at home there.
It doesn't have a sign (very new york), it's very trendy, full of fashionistas, expats, and people who like to show their status, they have a dress code/door policy, its members only (but you can usually get in if you wait), and it stays open late.
It's hyped up just as much as Dragon-i, and it has a resiliant staying power, like Dragon-i
It's in an alley, behind the hot dog stand, just off hollywood road. Everyone knows where it is.
The other issue with HK night life is that there are only a few demographics here. There's not the variety of age groups, and social groups that you see in other cities. At least in the westernish/expat nightlife scene.
