10 years experience is a bit too excessive for a barista, if the passion is there then he/she could learn quite quickly which is why a lot of these new cafes have young staff, they are doing it because they want to. Same with the new well-known roasters who have nothing like 40 years experience you said but are doing a great job.

Having said that 10 days or 10 years in HK would make no difference at all because the passion is not there. There are a few exceptions but not many.

Could that be, because in general, the coffee quality by 'independent' coffee shops is/was crap? I know it's cool and trendy to bash Starbucks as the 'big, evil, multinational corporate' but in the UK at least they have been a major contributor to improving coffee in general.

Where Starbucks led they were followed by Costa and Caffe Nero. At the risk of being branded a philistine, I quite enjoy Starbucks coffee (but then, I only drink Americanos which probably isn't very trendy either...)
