I'm a Canadian vacationing in Hong Kong for 2 months, going to be heading to Thailand and Cambodia while here but I'd also love to see China. My question is about the tourist visa, can I get one while I'm in hk? What are the requirements now? The price of single entry? Also if I can get one where would I go to do so?
i have return tickets but is a hotel actually necessary? what if you have a friend you'd be staying with? would you need to supply an address or something else? and where in wan chai would i go to for this
the hotel is necessary. the rules have really tightened up - there is another thread on here called "China Multiple Entry Visa's - Banned" which will give you the background. I don't know where the visa office is in wan chi but googling the chinese embassy will tell you. The last post today on the thread above links to another site with a list of requirements and indicates that if you queue up in wan chi TWO HOURS before they open you might get seen. I'd go for the more expensive tour operator solution!

China does not have an embassy in HK. The visa office (The Commissioner's Office of China's Foreign Ministry in the Hong Kong SAR) is here: Google Maps
Once there just look out for the queues outside the building.
