Is it possible to somehow change my visa status to student if I am already in HK under a visitor visa? I ask because my student visa could arive to late for my booked flight...

You can usually inform immigration about this in advance, and then go to their office and pick up the visa. You then have to leave Hong Kong (go to Macau or Shenzhen) and re-enter on the student visa.
