Have you thought about using the "gas tanks" instead which would be butane or propane tanks.

All you need to do is make sure that you have the right regulator connected to the tank which connects the gas to the range cooker.

So worst case it does work without a mains gas connection BUT you might have to replace the gas tanks more often.

Why would you use bottle gas ? Most modern ( built in the last 20 years )apartments in mainland China have town gas.

Also, depending on the location, a lot of new "luxury" apartments / houses, have a fully equipped western kitchen, that includes a proper gas or electric oven.. Nanshan District in Shenzhen, within 5 minutes drive radius of the Crown Plaza Hotel, is a good example of what I mean.

Depending on what part of China you plan on locating to, you shouldnt have any problem locating a wall/underbench oven in the main cities, ie Guangzhou, Beijing, Shanghai, Guangdong, Shan Xi....etc etc.

The local gas authority in the region that you plan to live, will be your most logical point of call, as they will have a list of approved oven manufacturers.
