| | | UHT Dahi or Paneer Anyone know whether yogurt/dahi or paneer can be made from UHT milk (of which - for various reasons - I find myself with a bit of an excess) and whether results can be half-decent? I've never done it with anything other than "fresh" full-cream milk before. Thanks. | |

you may get a little more whey then normal but otherwise the result should be stupendous
I prefer using kombucha instead of vinegar to curdle the milk for paneer, and I like to add a bit of Roaring Forties Blue Cheese to create a memorable mixture. As an alternative you might want to splash a bit of Angostura Bitters. | |

I'm not one for very rich or creamy yogurt - actually the type I like is not too far off from the Dairy Farm one in supermarkets, so after coming to HK I've never needed to make it at home (unlike Taipei before that where the only natural one - Danone - used to be hopeless). So will need to hone my rusty skills a bit - including (well-washed!) finger technique for gauging milk temperature.
If dahi works, paneer (with lemon juice for curdling) can't be far behind (well, next week-end). Ta! | |
