The best, and most logical choice, would be Sai Kung, between Mah On Shan and Sai Kung. There are some very naturalistic scenic pockets along there, low density village homes are the order of the day, sea, jungle, mountain views, are all part of the lifestyle enjoyment.
On the weekends you can unwind at the many outdoor cafes in Sai Kung town, have a few laughs at some of the regular expat haunts, Steamers bar, being one of the most popular.
We really enjoyed our time when we lived there.
One thing I have learnt though, if the commute to work is short, then the chances of you having a washing line view and a tiny box to live in, increases exponentially. Longer commute = better view and bigger space. If you are not bothered about using buses to get to and from work, the Sai Kung district will be the right choice, and you will never look back once you have had a taste. Shatin is 30-40 minutes from Sai Kung on a typical day, Central is between 40 minutes to an hour, from the time you leave your door.
