Would there be a nice way of letting them know am not interested anymore?!

Could it be since I just have secondary education they are making me go through all this, even though I have over 15+yrs work experience?

This time around would it be ok not to wear a suit?
Every organization has different hiring procedures and policies. It is not uncommon to go through 4 to 6 rounds of interviewing whether the position is for a permanent position or a consulting gig. Keep in mind that there is always the possibility that the organization may be considering you (the candidate) for a larger role and/or a broader scope.

Also, keep in mind Hong Kong may be highly populated but within professional and industrial circles it is an EXTREMELY small place so, if you are no longer interested in working with the organization you have been interviewing with kindly tell them something along the lines that "I would like to work with you however at this time another client is ...." Organizations like to know that they are dealing with capable people in the field - eluding to the fact that you are working with more than one client and not them exclusively will reaffirm that others in the field believe you are capable of doing the work successfully. Plus you are still leaving the door open for future contact and work with the organization.

Whether to wear a suit or not - well you have been in the organization through 3 rounds of interviews - is everyone wearing a suit or not? Follow the organization's lead but if they are all in sport wear and casual then I personally suggest smart casual.
