I'm want to enjoy a nice theatre environment (to watch a movie) in the Central area. Can anyone recommend one? Any dinner with movie cinemas?

Your major problem would, I suspect, not be so much the environment as the rest of the audience. The noise level in cinemas here is extraordinarily high. The closest to what you want is probably the Director's Club, which you might be able to get a big enough bunch of like-minded friends together to book completely.

It's also worth checking out the cinema in the IFC Mall. I'm there fairly often and I've never felt the audience to be noisy. It's an upscale cinema with a small cafe/restaurant and bookshop attached. Certainly one of the nicer cinemas in Hong Kong. The restaurant fronts on to the mall though so it's not a romantic or cosy option for dinner. There are lots of good restaurants within IFC however so you can easily eat at one of them before the film. Check it out the link below and see if it fits what you're looking for.
