Job hunting norms

I'm hitting the job hunting trail after a period of time off due to family illness and simply wanting a break to travel afterwards. Should I try to address this gap in employment, either on my cover letter or Resume/CV? How badly will this hurt my prospects?

As for my CV, the usual advice (at least in the US and Canada) is to restrict a resume to 1 page in length. But in the course of hiring people at my last place of employment, I found 2-3 page CV's to be more common in Hong Kong. This could make my one-pager seem skimpy by comparison. Is it acceptable to expand my CV to 2 pages, to include more detail on various projects that I've been involved in?
