can we use our current cell phones (with gsm) and just take out our current sim cards and get new ones from a hong kong service provider? or is it like in the US where you have to get a phone from the provider?

You can just get a new SIM card in HK. (And even if the handset is sim-locked you can get it unlocked in HK for a very small fee.)
