Hi,

I've stayed in Studio 9 in Causeway Bay since January. It's opposite Times Square (3 MTR stops from Central). The flat is not too big for my standards (I am quite a big guy), but the room is set very functional - everything at hand, even fridge and safe box, TV with DVD and broadband Internet. They just launched it and it's brand new. I don't remember the website address, but you can try google: "9studios hong kong"

Affordable, quiet and lots of shops and restaurants just downstairs - I like it

I second this recommendation. I'm also pretty big, and I survived 5 weeks in their smallest room. I did feel like a bull in a china shop on many occasions, but the people who worked there were quite pleasant to deal with, and the location was superb (Time Square, CA Fitness and Starbucks all within a minute's walk).
