The various mobile providers have shops all over town.
CSL's shop is called One Two Free
PCCW is the major Telecoms company here and they do mobile too.
You can also do Vodafone or 3 and I bet there are more.
In Causeway Bay there are many branches of these shops but you will find them all in a row on the same street as the trams, diagonally opposite SOGO.
In Central you will fine One Two Free beside Starbucks in Lan Kwai Fong and if you keep walking down the street ans accross the main road you will find more in the street just opposite.

For your TV the cable setup you want is from Now - this is part of PCCW and you can do a bundle deal to get your home phone, Now tv and broadband internet through their other brand Netbigator and possibly your mobile. They generally sign you up for 12-18 months in the deal. You will see these deals offered in the PCCW shops or at temporary stands setup on the street or in mtr stations.

There is one other tv company called icable that do get some specific sports but Star and ESPN are both on NOW.
