I'm moving over in a few weeks (visa pending). I currently bank with HSBC in the UK and thought it would be easy to open a HK account before I left - wrong! Takes about 3 months!

So I'm going to have to open one when I get there. I need to send money back to my UK account (HSBC) to cover bills. Will I get charged a fee to send money between HSBC accounts?

Also, I'm a bit fed up with HSBC and would like a new bank but will I just be making matters more complicated by moving bank (the transfer would still need to got to HSBC UK)?

If you are HSBC Premier then no fees for moving money between HSBC Premier accounts in different countries. Otheriwse an online transfer from HK costs HK$100 plus whatever tha far end charges (similar). So about HK$200 = GBP14 or so.
