Knife sharpening

Hi...I was wondering if anyone knows a good place to go to get a knife sharpened by hand (not on a grinder). I need someone who can work around a teflon coating, preferably.

i dont' know if this knife shop can help you dealing with telfon coating...

but this is one of the very famous knife shops in Hong Kong

Shweta: there's an old man in the Mid-Levels who sharpens knives on the street...you know he's around because he's always yelling. He sounds like a woman though...He uses a grinding wheel powered by pedal, I believe.

Kombucha...thanks. I think I might have to get a diamond stone (finest grit) from the US to get my knives to where I want them. I want them shaving sharp!

Namaskar Shweta, I see him on Caine and Bonham Road, especially on Sundays. I just bought a diamond stone and I'll be getting some more stones with different grit levels. I might have to start my own knife sharpening business soon...heh. "Shaving Sharp."
