That's pretty much what I did... A friend in the UK gave me a NWT pre-pay card before I came out here, so I'd have a number and a phone when I landed, and I didn't want to move the number over immediately when I wanted to try out the Peoples unmetered GPRS. I signed up with Peoples, used two phones for a month, then signed up with Peoples again at the end of the month for a new account with MNP, letting the original Peoples number go, since I'd never used it for voice. You actually get slightly better rates if you're an MNP customer - a credit to cover the tunnel fees, and 10% more minutes thrown in - something along those lines, anyway...
