I was the same way, I thought I could sit it out and wait to just use the A/C. But the other day it was so humid, I couldn't sleep because I was so sticky.

I bought a dehumidifier, and life is so much better now. When it's time to use the A/C, I can use this as a backup the the A/C. Set it to a certain humidity %, so when the A/C makes it dry, the dehumidifier will shut off. And when I am not using A/C, it will turn on and keep the place dry.

As far as the water goes, you'll be changing it probably every day, so it won't have a chance to sit around and become stagnant.
