Airsoft is far more popular here in HK than paintball. As a consequence there is quite an industry for that here with loads of shops and many organized commercial game sites.
Airsoft games are much larger than the neat indoor paintball events. They are mostly in the remote areas of the New Territories and you can enjoy the better air and beautiful scenery of the countryside. Games are normally on every sunday and they include everything you'll need for the whole game day (i.e. transportation, lunch, weapon, ammo, clothing, protection). The better game sites have Game Marshals and some have English speaking or even native English Instructors. One game site is run by an Ex US Marine and they are well-organized. So, to summerize and answer your question: Don't worry - bring as many folks you like (there are even large scale annual events with around 200 players, usual games consist of around 30 players though) and the rest is done and provided by the organizer. Just bring a good pair of shoes/boots.
P.S.: There's a nice outdoor game site that provides both Airsoft and Paintball. The nice thing is that their Paintball rifles look and operate more like real fireams and are thus more like Airsoft weapons, but they still shoot colour ammunition. So, it's a mix of Paintball and Airsoft. A good way to try out a more realistic kind of wargame if you are used to play Paintball.
