Obtaining a work visa without a degree

I am 19 and my family is moving to Hong Kong for a few years. My younger siblings can go to school but because I am over eighteen I need to get an independent working visa. I don't have a degree, I am studying but it will be a few years before I finish. I want to be able to live in Hong Kong and either work or study for the whole three years my family are there. There is a visa option for young Australians but it is only for one year and you can't work/study in the same place for more than 3 months. Plus this time of visa can't be extended. Sob story over, these are my questions:

1. If you travel on a holiday visa (up to 90 days at a time), how long do you need to leave Hong Kong for before you re-enter for another 90 days?

2. Is there any way to obtain a work permit without a degree? If so, what types of jobs?
