Winter Cottage Soup Recipe

Ingredients

Chop a quarter of a supermarket ( small ) sized collieflower into bite sized pieces.

Finely dice a standard bunch of Parsley.

A handful bunch of finely diced spring onion.

Finely dice 2 green chilli peppers.

Grate 1 large carrot

Puree 4 large red tomato's

half a supermarket bag of frozen peas, corn and carrot.

1 teaspoon of red chilli powder

dice 2 potatoe's

half a teaspoon of coarsely ground pepper.

2 Bay leaves.

2 table spoons of extra virgin olive oil

add a Quarter teaspoon of salt.
add a heaped table spoon of ghee.
add 4 finely choped/diced garlic cloves
Add about the same quantity of diced ginger

Optional * * You could also add either diced chicken, beef or lamb bite sized pieces if you like. Easy to improvise this soup.




Method
Once you have all of the above in your pot, do the following below.

Add water to 8 tenths capacity of the preferably clay pot, simmer for 1.5 hours, stir once every
20 minutes.



Serve piping hot, with freshly baked buttered bread, or microwaved hard crust dinner rolls, and you'll have a simple,
but very wow, winter meal, for low cost, but very high satisfaction awarded..


PS: Even Hong Kongs smallest kitchen ( and thats a pretty small kitchen) can manage to cook this soup in an electric pot, or in a pot on a portable electric hotplate..
